In keeping with its name this restaurant décor has been inspired by deep Metals, warm wood tones, and natural stone textures. This palette continues to evoke the natural elements of the hotel with a nod to the hotel leaf motif in 3 dimensions along the feature wall creating a statement and allowing a more intimate setting it has also been incorporated into the design with the use of decorative mosaics with a leaf design and a touch of aqua. Colour also punctuated the neutral tones with shades of aqua on the interior of the dining area and deep mustard yellow on the exterior. It was also important that the buffet room be completely coordinated with the design concept not just the cabinetry but also the plating and display. Using the concept of the elements of cooking – salt, sweet, sour, bitter umami aligned with our building elements of wood, metal, fire, water, earth we created an eclectic collection of textures for tastes. The display is functional and appealing using wooden display boards, metal risers, and tall local leaf displays in glass vases creating an environment where we eat with our eyes first!

This is a cozy nautically themed rooftop lounge. It is located on the roof of an 8-storey building. The space comprises of a small kitchen, a covered dining space with a bar, a lounge area with a small plunge pool and cabanas that overlook the beachfront. Its is appropriately themed using a nautical look and feel inspired by the 270 degree view of the ocean. We used a base palette of white teak and navy. For added interest we applied a wall mural reminiscent of an old ship blueprint. This space is simple yet extremely effective. It is a great backdrop for the natural ambience, cooled by constant island breezes, and lit in the evening by a million stars..
MAXWELL, BARBADOS
RENOVATION
Aqua Terra is a restaurant combining the grilling skills of the chef for both seafood and meat. There is an open grill station where guests can admire the effort placed into making each meal a speciality. Along with interior dining that overlooks the aqua waters of Barbados there is also more casual lounge seating under the shade of umbrellas by day and the stars at night along the deck that overlooks the white sand beach. The design has been inspired by the beautiful translucent colours of the jellyfish. The Custom chandeliers were the pivoting items around which the design is aligned. This was a renovation job on a condensed budget. We tried to spend the money where it would have the biggest impact. Keeping the existing furniture and refreshing with new cushion fabrics and new table tops we combined this with new custom painted entry doors and accent walls behind the bar. This combination of old and new aligns with our sustainable approach to design and architecture.

Oro is a unique fine dining experience in this beautifully designed air-conditioned space. It is located on the ninth floor offering breath taking 270-degree views of the south coast of Barbados. This stunning setting creates the perfect backdrop for this modern vintage design. Inspired by its name we introduced lots of gold elements in the light fixtures, tiles, and wall finishes. We used lots of plush upholstered chairs and banquets to create a feeling of opulence and intimacy and also to added a layer for noise reduction. We introduced large column features cladded in black marble with gold and white veins with a long gold vintage light fixture. This rhythm of columns leads you through the space. The space flows from a lounge with low seating located near the bar through to the dining area with a variety of seating options for added interest. White calacatta marble tables are mixed with black marquina marble table tops all with gold and black bases. These are combined with a combination of brown aged leather chairs, plush grey fabric chairs and plumb coloured banquets. All creating a luxurious elegant atmosphere.

Cerulean is a fine dining restaurant in an old plantation style colonial home which has been converted in use many times over the past 20 years. We were tasked with making a big impact on a minimal budget. Apple and Iron have sustainability at our core and thus accepted this challenge easily. We used a mixture of refurbished existing furniture with some new pieces. The entire space was sanded and repainted. The walls and columns in new crisp white whilst the floor was done in a rich cool brown. The décor exudes the name itself! Deep rich cerulean blues with gold accents. All inspired by the rich blue and gold of the evening sea and sky! An evening meal feels like a luxurious experience against the backdrop of the deep ocean blues and constant hum of the ocean waves.

The Mahogany Lounge is a beach-chic buffet restaurant. By adding bright pops of coral colour to its neutral base palette of grey and white, we were able to create excitement and reflect the energy of the Caribbean. The end result is a space that exudes class, whilst retaining its warmth and casual atmosphere. Since a few majestic mahogany trees had to be removed from the site in order to erect a new seven-storey building, we were inspired to repurpose the wood in the furniture, mirrors, shelving, buffet island and other accessories. We couldn’t save all the trees, but by including them into the fabric of the design, we have paid homage to their beauty.
MARINA VILLAGE, ST.LUCIA
RENOVATION
Marigot Bay is well known for its safe harbour. Many mega yachts dock here each year, safely tucked away from danger thanks to the bay’s deep channel.
The Hurricane Hole provides both crew and owners a relaxed outdoor restaurant which incorporates an open kitchen counter, a bar and an ice cream parlor, with an outdoor deck for dining over the fish.
Both the bar and restaurant have a nautical feel, which creates a welcoming atmosphere for both casual guests and crew. We added maritime elements of rope, copper lights, and aged wood planks to create a rugged space where mariners are free to be themselves, and drop-in customers can get a delicious taste of the salty dog lifestyle.
L'ANSE AUX EPINES, GRENADA
RENOVATION
The new Beach Club at Calabash Hotel Grenada was a joint venture with G & G Interiors. It fuses Caribbean island architecture with that of the Mediterranean. Caribbean focused finishes, like deep dining chairs hand wrapped in grey rope are juxtaposed with soft upholstery in natural organic tones. The palette is weathered grey & muted Caribbean hues. Crisp pops of blue in artwork, menus & glassware, nod to the hotel’s magnificent location overlooking the Caribbean Sea. The beach side trees cast their shadows on the warm weathered teak & white surfaces creating a calm & chic beach vibe. The aim was for a beach club concept that fuses entertainment, dining & a beautiful sandy setting all in one.
